The truffle course

The Highly prized white and black truffles will be found directly by you! Truffle hunting is first of all a wonderful open air activity that gives the chance to enjoy nature and the company of our fantastic dogs. Truffle hunt requires passion, constance, skill and good legs. To buy a trained dog and to wander around the countryside is not enough to hunt truffles. A good dog can be a great help, of course, but it's necessary to have the necessary skill and to acquire a certain experience, day by day, step by step, with much hard work. The expert truffle hunter knows perfectly how to behave in order to preserve the safety of the environment and of the truffle zones, with the exact knowledge that this is the first rule to not exhauste the yearly development of truffle.

The Truffle Hunter

Here in these lands, where the perfumes of the nature lasts inside your soul. I left this area a few years ago to dedicate myself to the export of local black and white truffles for the London restaurants and the Borough Market. The precious tuber was quickly appreciated by important chefs such as Jamie Oliver,Giorgio Locatelli, Carluccio, Gordon Ramsay, Raymond Blanc and others. I returned back home in 2005. The restoration of the countryhouse which was once my grandparents took two years to complete. Countryhouse Ramusa is located in the magic truffle area, cuddled by the sweet hills of the Marche Region. It is immersed in the utmost quietness where total privacy is guaranteed, it has a wonderful swimming pool and is situated in a scenic location 30 minutes away from both the sea and the National Sibillini Park.

The Chef

Ennio Barbieri is an experienced Italian Chef, he is an active member of the Slow Food association, researcher of ancient traditions, and a real alchemist. Behind his joking and informal attitude hides an enormous source of knowledge and information that satisfies both the lover of the Italian Kitchen and the professional. You will learn to cook gastronomic delights and gourmet dishes in the Ramusa restaurant.

The Piceno-area, the South part of Marche, is a traditional truffle area of Italy. The months of October, November and December are the most important truffle-months, because this is the period of the prestigious white truffle, il tartufo bianco, and we dedicate urselves during this truffle course to this white truffle.
